Flank Steak Fajita

zero. 0.5Kg Flank steak, 1 green pepper, 1 yellow pepper, 1 orange pepper, 1 green onion, 1/2 cup of HP steak sauce, 4 tbsp olive oil, 3 tbsp vinegar, 1/2 lime, 1 can black bean, 4 corn tortillas, 1/2 avocado. Sauce: 10 tomatillos, 1 cup cilantro, 1/2 avocado
1. Let’s start by making the sauce that will glaze the steak. In a small bowl, mix the HP sauce, olive oil, vinegar, lime, a pinch of salt, and a pinch of pepper
2. Place the steak in an oiled/heated pan, alternating the sides every two minutes and brushing each side with some of the sauce above. Cook for 10 min
3. Place the steak in a baking pan and cook in the oven for 20-25 min at 400F. Take the steak out midway and brush with the HP sauce, put back in the oven
4.  While the steak is cooking in the oven, cut the peppers/green onion and cook in the frying pan with some oil for 5 min. Set aside
5. Tortilla cup: Place the corn tortillas in oiled wells of a muffin pan. Place in the oven with the steak and bake at 400F for 10 min
6. Tomatillo sauce: Cut the tomatillos into quarters then place in the blender with the cilantro, avocado, lime juice, salt and pepper. Blend until you get a smooth sauce
7. Take the steak out of the oven and brush with the HP sauce and cut into slices
